Apple, Celery And Nut Salad Recipe

Ingredients for Apple, Celery And Nut Salad
  • For Dressing
  • 1 tablespoon vegetable shortening
  • 1 teaspoon mustard
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • 2 eggs
  • 4 tablespoons lemon juice
  • 1 cup whipped cream
  • For Salad
  • 1 quart chopped apples
  • 1 pint diced celery
  • 1½ cups blanched and shredded almonds
  • 2/3 cup rolled pecan nut meats

Instructions
  1. Celery and Nut Salad Recipe, For salad.
  2. Mix apples, celery and nut meats.
  3. For dressing.
  4. Melt vegetable shortening, add mustard, sugar, salt, pepper, yolks of eggs well beaten, and lemon juice.
  5. Cook in double boiler till it thickens, then add whites of eggs stiffly beaten.
  6. Chill and add whipped cream just before serving.
  7. Dressing should be mixed with fruit.
