Ingredients for Anchovy Canapes Recipe 2

  • 6 anchovies
  • 2 hard boiled eggs, yolks separated from whites
  • 4 tablespoons butter
  • ¼ teaspoon salt
  • Few grains cayenne
  • ½ teaspoon lemon juice
  • 6 croutes of bread

Instructions

  1. Wash and bone the anchovies.
  2. Pound anchovies to a paste with the egg yolks, butter and seasonings.
  3. Fry the bread, spread with the above paste, and sprinkle finely chopped egg whites over each piece.
