Anchovy Paste Recipe

Instructions

  1. Take a dozen anchovies, scrape them clean, raise the flesh from the bones, and pound them most thoroughly in a mortar; then press them through a fine sieve.
  2. Add the same weight of butter melted, but not hot.
  3. The less butter used the stronger will be the flavor of the anchovies.
  4. Time, about half an hour.
