Ingredients for A Late-summer Breakfast Dish Recipe

  • 3 tomatoes
  • 6 poached eggs
  • 6 slices broiled bacon

Instructions

  1. Peel the tomatoes and cut out the hard piece around the stem end. Cut in half.
  2. Place in a well-oiled broiler and cook over low heat until hot throughout, turning often to avoid burning.
  3. Place on a serving dish.
  4. On top of each tomato, set a poached egg and add a slice of broiled bacon above or below the eggs.
  5. If preferred, the tomatoes may be cooked in the oven.
