Many venison recipes can be adapted to make them lower in sugar and carbs to suit a diet for type 2 diabetes.
You can broil the venison, like in this recipe, but leave off the jelly. To add additional flavor, without the sugar, try marinating the meat first in a citrus and olive oil base, like orange juice, olive oil and basil.
If you want to bread the venison for cutlets, try dipping them in olive oil, then dredging them in a combination of almond flour, salt and pepper. The almond flour is high in protein and fiber, but low in carbs, while adding a breaded texture and nutty flavor. You can bake or fry the cutlets as you desire.
